Well, there is also the American grip, which is a hybrid of French and German grips. If you look at Dom Famularo's video lessons on VicFirth.com, Dom explains what all three grips are, lays out some of their uses and strengths, and demonstrates each grip both on a practice pad and full kit.

Bear in mind that pivoting your wrist works better with a French grip-based position (thumb on top or near the top of the stick) rather than a German grip-based position (thumb on the side of the stick). With a German position, wrist pivoting is much harder (and potentially can screw up your wrist)...
